Mock Lasagna

I really enjoy this lasagna! Have you ever wondered what "lasagna" means? Definition: -a baked Italian dish consisting of wide strips of pasta cooked and layered with meat or vegetables, cheese, and tomato sauce. -can also refer to a dish made with several layers of lasagne sheets alternated with sauces and various other ingredients. I have been changing our way of eating as of late. We have always been vegie eaters with meat. We both have noticed when we eat anything made with flour, we end of feeling poorly. A change was needed. We are not saying to completely take it out but limit it to once in a while.  Mock Lasagna is what I came up with. Recipe: 2 medium zucchini's sliced long ways thinly(use the mandolin slicer, if you have one)  1-15 oz Ricotta cheese 2 eggs 1-container of fresh mushrooms 1- onion, chopped 1lb of cooked ground- 2 lbs if it is chicken or turkey 1 qt of tomato sauce Herbs for seasoning Pep...

Mary's Cabbage Rolls

This recipe is my own version of Cabbage Rolls. There are so many different ways to make them by  Googling  them you can see for yourself. I first start out with a head of cabbage of medium size, place in pan of water to boil. Once you have it boiling, let it boil about 15-20 mins this should get all the way thru to the heart of the cabbage. Once done set aside in a strainer/colander to drain excess water off. Better to drain heart side down! While you are boiling the cabbage, start frying up your meat combo(1 lb ground sausage & 1lb of ground burger) add 1 med onion, chopped and add seasoning such as garlic powder & Montreal Steak Seasoning. Cook until done thoroughly. ***Reality is you will probably have cabbage done before the meat is finished. While all your meat and cabbage are cooking put on some rice (1 c white rice to 2 c water) bring to boil then turn down to simmer until water is gone about 20 mins.  Ok then you mix the rice and meat together ...

Mary's Lasagna

This lasagna only has 6 noodles in it! The rest is goodies and it stands up really well. What I mean is it is firm when you are done even tho it has little bit of noodles. And it tastes yummmy!! As she sings that at the top of her lungs in Opera style! Recipe:  1-Lb. ground sausage 1-Lb. ground burger 1 large onion, chopped 3 Tbs. minced garlic olive oil Add oil to your cooking pan...heat just a wee bit then add onion. cook for 2-3 mins then add your ground meats and cook thoroughly. Add minced garlic leave on heat for 2-3 mins. Remove from heat. 15 oz. Ricotta Cheese 1-2 eggs 1 quart pasta sauce or marinara sauce  2 Tbs Italian seasoning or Herbal seasoning 2 tsp black pepper 1/2 tsp salt mix Ricotta cheese and eggs together until smooth. Add pasta sauce and seasonings to this mix and stir real good..put aside for layering process   1-Lb. Mozzarella Cheese, Shredded 1/2 C. Meatloaf Burgers

1 lb Ground Meat, thawed 3/4 C Seasoned Bread Crumbs 2 Eggs 1/4 C cream 2 tsp Montreal Steak Seasoning Mix all together thoroughly. Make up patties.  Oil your skillet like you are going to fry something (1/8 full in your pan) Heat your oil then place your patties in carefully. Brown both sides of your burgers. Heat oven 350* Remove from skillet into an oven safe dish. Place in oven for 30 mins, depending on burger size, until done to your satisfaction.  Finish off with a bit of ketchup on top! Enjoy!

Tacosagna

On today's menu, I made "TACOSAGNA". I found this recipe on Mennonite Girls Can Cook . It was yummy! I made some adaptations to the recipe as we are still trying to watch our carb intake a bit but didn't want to ruin the "ambiance" of the dish. My recipe is as follows: 2 lbs of ground cooked, 1 packet of taco seasoning added to meat, 2 cans of corn added to meat, 1-12oz jar of salsa added to meat and cooked for about 10-15 mins. Then in separate dish I lined the bottom with meat mixture, not a lot just enough for a base, then added two reg size flour tortillas on top of meat. Added meat mix, grated cheese and then about 1/2 cup of sour cream spread out on this layer. Another two tortillas then meat mix and cheese and at this point should have run out of meat and cheese and pan is full!!! Cover and put in oven or on a grill at 350* for about an 45mins-1hr.

Chicken Croquettes

3 cups of chopped, shredded meat (chicken or tuna or ham in a can), DRAINED 2 eggs may need addl egg 1 Tbls (approx) parsley 1 tsp salt 1 tsp pepper optional instead of salt & pepper try Cajun seasoning In a bowl mix all together good, if you find they are a little dry add addl egg. This mix should look wet, not soaked. Heat oil, olive or corn, in a pan. Using a tablespoon for measurement make small patties of a sort. Drop these in your hot oil pan, carefully! CAUTION***While these are cooking they will pop & crack in the oil please use a grease guard (looks like a screen made for your pan with a handle on it). When the one side gets brown, carefully flip with a spatula or flipper depending on where you are from, as these are fragile at this point. When the first pan is done, repeat process until finished. Easy Peasy Pizza

When my step mom wanted something quick and easy for six kids she made these..... Little Mini Pizzas.... Even us kids would help make these. 1- 6 package english muffins or however many you need for your family   1 can of pizza sauce  1 lb of hamburger, cooked (will have some left over unless you use more muffins) shredded cheese toppings of your choice get creative! I toast my muffins before putting anything on them. Not soggy then. Put a tablespoon of sauce on each one then a large pinch of cheese then your hamburger and toppings.  Broil for about 5 mins or less... just until the cheese is melted! I wouldn't recommend microwaving makes the muffins chewy. So Easy!!!

Venison Stew

I have shared a lot of stew recipes such as: Burger Stew ,  Pork Stew . I usually get asked how to make something with Venison. One of my stand bys is Venison Stew in the crock pot or the cast iron bean pot on the wood stove.  Recipe: Add to the crock or stew pot 1 lb. Venison Cubes, fresh or frozen, uncooked and 1 large onion 2 qts of canned potatoes-this is what I have in my pantry but you can use canned from the store or fresh(add to crock and cook until soft) 1 cup of corn, frozen, fresh, canned 1 qt. tomato/okra mix (optional) OR 1 qt green beans OR  1 qt tomato sauce 2 tbls of Montreal Steak Seasoning 3/4-1 qt water-add enough to finish filling the pot  Turn crock on high and cook for about 3-4 hrs..or longer if the meat is tough. ***Idea....put together the night before and turn on before leaving for work then come home for lunch to turn it off or down to low should still be warm upon your return in the evening.Note you cou...

Fresh Garden Stir-Fry

  FRESH GARDEN STIR FRY   Cut up your vegies in bite size pieces. If like meat (precooked) cut some up to add. In a large pan add a bit of oil and heat. Add all your vegies except tomatoes & meat cook until done through. Then add your meat and lastly your tomatoes until heated a bit. Serve on a bed of spaghetti/angel hair noodles.
