White Trash Lasagna

I made this up today and it was a hit with hubby(3 helpings).
Prep Before Layer:
1. Boil 1 whole chicken until falls off bone or Cook about 3-5 lbs of chicken
then shred it
2. (1)Large container cottage cheese mixed with italian seasoning(3Tbls), 1/4 cup parmesan cheese and Tbls of garlic
3. Shred about 1/2 lb of cheese
4. blend up whole tomatoes (only if you need too...buy tomato sauce instead!)
Layer In Order:
1.spread a few tablespoons of tomato sauce in the bottom of a 13x9 pan
2.lay 3 long noodles(uncooked) lengthwise
3.spread tomato sauce about 1/8" thick
4. spread cooked , shredded chicken on this layer
5. spread half of the cottage cheese mix
6. 3 lasagna noodles
7. tomato sauce
8. chicken
9. cottage cheese mix(the other half)
10. add shredded cheese
11.garnish with olives if ya have them
12. bake in 350-400 degree oven ....for approx. 30-45 mins or until you stick fork in it..goes through cooked noodles easily!(I baked mine on bbq grill)
Pull out of oven and let sit for 10 mins
Serve and Enjoy!

Baked Fresh Fish

You have gone fishin' and caught some beauties! Now what to do with them.

Main ingredient in this recipe is BUTTER!
We like our butter here in this household. Rinse them(fish) off after cleaning them out.
Place butter slices(1tsp worth) in bottom of a baking dish appropriate size for the amount of fish you are cooking. Place fish in on top of butter slices that are in the bottom of pan... I used a 13X9 pan so it took about 6 pads of butter.
then in the gullet of each fish I added yet another pad of butter or two depending on size.
I cut open two small lemons and cut into 4 quarters. Squeezed the juices out over the fish in the pan, laying the leftover lemons throughout the pan on top of the fish. Cut some fresh dill flowers out of the garden and spread them out over the top of the fish.
Added to a heated grill and baked until fish were completely cooked. ( Fish will look like it is falling apart and meat will flake)


Bert's Colored Stuff

When I first heard about this, I was very curious! Pink Stuff, huh?
Then when I saw how simple and delicious it was....I wanted to make it all the time!!
1- regular size tub of Cool Whip
1-large tub of cottage cheese (4% works best)
1-regular box of jello gelatin(your choice of color & sweetness)*I use sugar-free* Just the powder do not make it into Jiggly Jello!!!!
1-can of peaches
1-can of pears
optional to add nuts into colored stuff


Mix altogether
Let sit in the fridge for about 30 mins to set!
Yummy Yummy! Taste's so good the kids have no idea they are eating cottage cheese!!

Mock Lasagna


I really enjoy this lasagna!
Have you ever wondered what "lasagna" means?
Definition:

-a baked Italian dish consisting of wide strips of pasta cooked and layered with meat or vegetables, cheese, and tomato sauce.


-can also refer to a dish made with several layers of lasagne sheets alternated with sauces and various other ingredients.


I have been changing our way of eating as of late. We have always been vegie eaters with meat. We both have noticed when we eat anything made with flour, we end of feeling poorly. A change was needed. We are not saying to completely take it out but limit it to once in a while. 


Mock Lasagna is what I came up with.


Recipe:


2 medium zucchini's sliced long ways thinly(use the mandolin slicer, if you have one) 


1-15 oz Ricotta cheese


2 eggs


1-container of fresh mushrooms


1- onion, chopped


1lb of cooked ground- 2 lbs if it is chicken or turkey


1 qt of tomato sauce


Herbs for seasoning


Pepper for seasoning


Salt or Seasoning Salt(optional)





I cooked the onion and mushrooms together, drained off the juice and set to the side


I cooked the burger by itself, drained off the grease, then added tomato sauce and seasonings


In a bowl, mix ricotta and two eggs together





Layer:


Line bottom of 9x13 pan with 1/2 of meat mixture


then lay sliced zucchini over the top of meat (in place of noodles)


then 1/2 the ricotta mix


then the mushrooms(1/2 the mix)


then the zucchini over the top of mushrooms


ricotta(1/2) next


meat (1/2)next 


then bake in 375* oven, uncovered, for 45 mins or until zucchini is soft! Poke with fork to see if they are done!


Remove from oven and let sit for about 5 mins ....you might notice a bit of juice in the pan ...no worries...no soggy anything to worry about!

Light Scalloped Potatoes


I had to laugh at my title because this recipe being "light" is like going to McD's asking for a Quarter Pounder with Fries and a Diet Coke! Ha Ha

In a large bowl put your 12 medium white potatoes sliced 1/8" thick(mandolin works great for this although I have yet to own one)
Add to the potatoes...Seasoned salt, pepper and 2 Tbs of melted butter. Mix thoroughly.

In a 9x13 pan spread out half of the potatoes then add about 1/2 cup of grated cheese on top.
Add remaining potato mixture...spread out evenly.

Bring to a boil 1 cup of milk(I used fat & lactose free), pinch of nutmeg, 2 pinches of herb seasoning.
When this mixture has been brought to a boil, remove it from stove and evenly pour over the potatoes.
Add another 1/2 cup of grated cheese on top of the potatoes.
Bake uncovered in  a 425* oven or grill for about 40 mins or until potatoes are soft.

Banana Nut Bread


Recipe:
 
I mix together in a large bowl.

1 Cup of Water
1/4 C Corn Oil
3 ripe bananas, broken up in bite size pieces
4 eggs
1/4 C White Sugar
1/4 C Brown Sugar
1 Cup of Pecans (optional)
3 Cups Flour
2 tsp Baking Soda
2 tsp Salt



Mix together thoroughly!

Pour into two bread pans..the pans should be filled about half way +/-
Place in a 350* oven for 50-60 mins or until your knife comes out clean!

I take out of the pans about 5 mins after they are pulled out of the oven and laid on cooling racks.
Doesn't hurt to slice a piece while it is still warm!

Slow Cooked Wild Meat


We have Venison in the freezer. It is tough meat! I was trying to figure out what to do with all of it. Should I can it? Well maybe, wait on the caner for 90 mins or longer to process on propane gas. Or put in a slow cooker overnight? I chose this one last night to experiment. Leave it and wake to the lovely smells of cooking.
It is very tender! And it's tasty !

Recipe:
1 Crockpot
1 C of water
1/4 Red Cooking Wine
2 Tbls Worcestershire Sauce
2 Large Tbls Diced Garlic
2 Small Onions, chopped
2 Large pinches of Red Pepper Flakes
2 Lbs of Frozen Deer Meat (Any meat really)


Turn Crock on Low, Put Your Lid On And Wait For 12 Hrs. Another words leave it and forget about it the smell will remind ya come mornin!



I probably will do more like this but am thinking the canning process will have the same effect but much quicker! And can store it on the shelf for later!
