Chicken Croquettes

3 cups of chopped, shredded meat (chicken or tuna or ham in a can), DRAINED
2 eggs may need addl egg
1 Tbls (approx) parsley
1 tsp salt
1 tsp pepper
optional instead of salt & pepper try Cajun seasoning


In a bowl mix all together good, if you find they are a little dry add addl egg. This mix should look wet, not soaked. Heat oil, olive or corn, in a pan. Using a tablespoon for measurement make small patties of a sort. Drop these in your hot oil pan, carefully! CAUTION***While these are cooking they will pop & crack in the oil please use a grease guard (looks like a screen made for your pan with a handle on it).
When the one side gets brown, carefully flip with a spatula or flipper depending on where you are from, as these are fragile at this point. When the first pan is done, repeat process until finished.

From here it is up to you what you would like to do with them. They are delicious plain or you can make a white gravy or country gravy for them. Chicken or Turkey gravy for them is good too!
I usually serve with green onions & mushrooms on top. Delish!
