Banana Nut Bread

Recipe:   I mix together in a large bowl. 1 Cup of Water 1/4 C Corn Oil 3 ripe bananas, broken up in bite size pieces 4 eggs 1/4 C White Sugar 1/4 C Brown Sugar 1 Cup of Pecans (optional) 3 Cups Flour 2 tsp Baking Soda 2 tsp Salt Mix together thoroughly! Pour into two bread pans..the pans should be filled about half way +/- Place in a 350* oven for 50-60 mins or until your knife comes out clean! I take out of the pans about 5 mins after they are pulled out of the oven and laid on cooling racks. Doesn't hurt to slice a piece while it is still warm! Enjoy!

Slow Cooked Wild Meat

We have Venison in the freezer. It is tough meat! I was trying to figure out what to do with all of it. Should I can it? Well maybe, wait on the caner for 90 mins or longer to process on propane gas. Or put in a slow cooker overnight? I chose this one last night to experiment. Leave it and wake to the lovely smells of cooking. It is very tender! And it's tasty ! Recipe: 1 Crockpot 1 C of water 1/4 Red Cooking Wine 2 Tbls Worcestershire Sauce 2 Large Tbls Diced Garlic 2 Small Onions, chopped 2 Large pinches of Red Pepper Flakes 2 Lbs of Frozen Deer Meat (Any meat really) Turn Crock on Low, Put Your Lid On And Wait For 12 Hrs. Another words leave it and forget about it the smell will remind ya come mornin! I probably will do more like this but am thinking the canning process will have the same effect but much quicker! And can store it on the shelf for later!

Oatmeal Raisin Bars

I consolidated two posts into one from my other blog....... 3/4 C Butter 3/4 C Brown Sugar(I used Splenda Brown Sugar) 1/4 C Granulated Sugar (Again Splenda) 1 C Flour 1/4 Roasted Coconut 1 1/2 C Oatmeal Cream the sugars and butter together, slowly add the flour, Add Oatmeal and Raisins, Mix thoroughly, Spread out by hand "smooshing" the mix into the bottom of the pan (9x 13, greased) *note this will be a thin bar almost like cookie thin* **Tonite I added about 1/2-3/4 C of coconut to the top and when it was all done is was toasted on top! 350* for about 20-25 mins or until it looks like it is browning on the sides...  I made use of the wood stove and baked some oatmeal/raisin bars which didn't last past the next morning. Cinnamon Roll Quick Bread

Yesterday I was over at "The Rehomesteaders" Blog and she had a recipe on there that I could not resist making called " Cinnamon Roll Quick Bread ".  I copied off the recipe and this is what I got..... Recipe at the bottom of this post taken directly from Rachael's site..... Mine did not come out like her picture looked but it is delish!  RECIPE:   Ingredients : Bread 2 cups flour 1 Tablespoon baking powder 1/2 teaspoon salt 1/2 cup sugar 1 egg 1 cup milk 2 teaspoons vanilla 1/2 cup plain greek yogurt or sour cream Swirl Topping 1/3 cup sugar 2 teaspoons cinnamon 2 Tablespoons water Glaze 1/2 cup powdered sugar 1 Tablespoon milk Preheat oven to 350F and spritz a bread pan with cooking spray.  In a large bowl, combine flour, baking powder, salt and sugar.  In a separate bowl, combine egg, milk, vanilla and yogurt/sour cream.  Mix wet and dry ingredients together.  Pour into greased bread pan.  Mix the swirl ingred

Broccoli Salad

My Broccoli Salad is not exactly like my mother in laws (my fav) but it comes a close second to it!  Recipe: 2 large heads of broccoli- cut into bite size pieces ( flowerettes only ) (some use cauliflower too) 1 large onion 1 cup of craisins 1 cup of raisins nuts are optional Dressing: 1 cup of mayo 1 cup of sour cream couple teaspoons of lemon juice 1/4 cup of sugar Mix everything together real good and let sit in fridge for at least 3 hrs before serving. Usually good to make the night before but hey some of us aren't that prepared.... . do the best you can it is still really good!!

Bisquick Quickie

 I came across some Bisquick while unpacking some camping stuff while looking for my baking supplies as my pears and apples needed to be used up. 1 C. of Bisquick 1/2 C of water +/- mix them together until they are the consistency of pancake batter. 4-5 apples peeled and sliced 1-2 pears peeled and sliced I used two small pints of berry preserves made with splenda 1 9x13 baking pan put all the fruit in the bottom of the pan and pour the Bisquick mix over the top of the fruit mix. Bake 350* for 30 min or until your toothpick comes out clean.

Bisquick Pizza

Remember the Bisquick I found in the camping gear well I have been trying to use it up. I intended on making Ranchwife's Panbread and decided to try something new for crust for pizza. 3 1/3 C Bisquick 1/2 tsp baking soda 1 C Warm Water Mix these together until it forms a ball. Then roll it out like pie crust and put on a flat pan to bake for about 7 mins in 375* oven. Then add your ingredients for pizza and place back into oven at 425* for about 17 mins or until done.

No Bake Chocolate Oat Cookies

I found this recipe the other day and had to try it! I am trying not to eat junk but sometimes you just need a little something to get ya through. Here is one of my solutions. These little goodies are great and are so simple to make. I changed a one thing from the original recipe . The recipe called for coconut oil and I used butter as I do not have coconut oil on hand. This little treat satisfied my sweet tooth. And most anything that uses honey I will try at least once!

Cast Iron Beans & Cornbread

In a cast iron dutch oven, a little bit of oil in the bottom of the pan add 1 whole onion, chopped cook until the onions are done then add rinsed beans. 1 can-black beans 1 can-navy beans 1 can-pinto beans 1 can-kidney beans 1 can-chili beans(do not rinse) Add water to cover the beans and bring to a boil. Turn down to a simmer for about an hour stirring occasionally. Cornbread from scratch 1 C Flour 1 C Cornmeal 1/2 C Sugar 4 tsp baking powder 3/4 tsp salt 2 eggs 1/4 C oil 1 C milk 1 can of corn or creamed corn(optional) Mix all of these in a bowl and pour into a 13 x9 greased pan Bake in 425* 23-27 mins

Mary's Cabbage Rolls

This recipe is my own version of Cabbage Rolls. There are so many different ways to make them by  Googling  them you can see for yourself. I first start out with a head of cabbage of medium size, place in pan of water to boil. Once you have it boiling, let it boil about 15-20 mins this should get all the way thru to the heart of the cabbage. Once done set aside in a strainer/colander to drain excess water off. Better to drain heart side down! While you are boiling the cabbage, start frying up your meat combo(1 lb ground sausage & 1lb of ground burger) add 1 med onion, chopped and add seasoning such as garlic powder & Montreal Steak Seasoning. Cook until done thoroughly. ***Reality is you will probably have cabbage done before the meat is finished. While all your meat and cabbage are cooking put on some rice (1 c white rice to 2 c water) bring to boil then turn down to simmer until water is gone about 20 mins.  Ok then you mix the rice and meat together in large bowl.

Basic Quick Bread

Recipe#3-Basic Quick Bread or Drop Biscuits I again cannot take credit for this recipe. First my bio mom gave me this and it seems to be the same as this recipe I got out of a book called Country Wisdom & Know-How which was lovingly given to us by hubby's parents couple years ago. While you are putting this recipe together keep in mind that TOO MUCH MIXING IS NOT GOOD!!! Less is More!! Machines(mixers, blenders, food processors, etc) do not produce good quick breads....... 1 1/2 c flour 1/2 Tbls baking powder 1/2 tsp salt 1/4 C softened butter 1/2 C Sugar or Splenda 1 egg 3/4 C milk In large bowl combine flour, baking powder, and salt. In Another Bowl cream butter and sugar. Stir(wire whisk) into creamed mix, the egg and MIX WELL! Stir in milk into this mix and then add this liquid mixture quickly to the dry ingredients using a wooden spoon. Stir just enough to moisten completely. Spoon the mixture into greased loaf pan or drop onto baking pan for bis

Basic Beer Bread

Recipe #4-Basic Beer Bread ( Country Wisdom & Know-How ) Easiest Bread I have ever made!! This is a no brainer and quick!! Keep in mind this is a yeasty tasting bread and makes great toast! 3 cups of flour if particular self-rising flour 3 Tbls sugar or Splenda 1-12 oz beer ( I used a non-alcoholic beer) 4 Tbls melted butter Combine flour, sugar and beer in a bowl. Scrape it into a well greased loaf pan. Bake 375* for 50 mins and then pour melted butter on top of bread and bake for another 10 mins. --------------------------------------------------------------------------------------------------------------- Tips* For your breads you can add just about anything to them like cinnamon & raisins, herbs & cheese, Etc. Have fun with them be creative that's when you get the best tasting breads!

Baking Mix From Scratch

Years ago when my bio mother was still talking to me she gave me some recipes to have as a staple in my pantry. I already shared the Cocoa Mix with ya now it is the Baking Mix same thing as Bisquick just not in a box or processed. 5 cups of flour, 2 tsp salt, 4 TBls baking powder...mix together thoroughly and put into holding container. I like these pickle jars but to each her/his own. You can use this for waffles, pancakes, cakes....I use it for everything except gravy of course.
