Baked Fresh Fish

You have gone fishin' and caught some beauties! Now what to do with them. Main ingredient in this recipe is BUTTER! We like our butter here in this household. Rinse them(fish) off after cleaning them out. Place butter slices(1tsp worth) in bottom of a baking dish appropriate size for the amount of fish you are cooking. Place fish in on top of butter slices that are in the bottom of pan... I used a 13X9 pan so it took about 6 pads of butter. then in the gullet of each fish I added yet another pad of butter or two depending on size. I cut open two small lemons and cut into 4 quarters. Squeezed the juices out over the fish in the pan, laying the leftover lemons throughout the pan on top of the fish. Cut some fresh dill flowers out of the garden and spread them out over the top of the fish. Added to a heated grill and baked until fish were completely cooked. ( Fish will look like it is falling apart and meat will flake)

Bert's Colored Stuff

When I first heard about this, I was very curious! Pink Stuff, huh? Then when I saw how simple and delicious it was....I wanted to make it all the time!! 1- regular size tub of Cool Whip 1-large tub of cottage cheese (4% works best) 1-regular box of jello gelatin(your choice of color & sweetness)*I use sugar-free* Just the powder do not make it into Jiggly Jello!!!! 1-can of peaches 1-can of pears optional to add nuts into colored stuff Mix altogether Let sit in the fridge for about 30 mins to set! Yummy Yummy! Taste's so good the kids have no idea they are eating cottage cheese!! Let me know what you think!! ;)

Mock Lasagna

I really enjoy this lasagna! Have you ever wondered what "lasagna" means? Definition: -a baked Italian dish consisting of wide strips of pasta cooked and layered with meat or vegetables, cheese, and tomato sauce. -can also refer to a dish made with several layers of lasagne sheets alternated with sauces and various other ingredients. I have been changing our way of eating as of late. We have always been vegie eaters with meat. We both have noticed when we eat anything made with flour, we end of feeling poorly. A change was needed. We are not saying to completely take it out but limit it to once in a while.  Mock Lasagna is what I came up with. Recipe: 2 medium zucchini's sliced long ways thinly(use the mandolin slicer, if you have one)  1-15 oz Ricotta cheese 2 eggs 1-container of fresh mushrooms 1- onion, chopped 1lb of cooked ground- 2 lbs if it is chicken or turkey 1 qt of tomato sauce Herbs for seasoning Pep

Light Scalloped Potatoes

I had to laugh at my title because this recipe being "light" is like going to McD's asking for a Quarter Pounder with Fries and a Diet Coke! Ha Ha In a large bowl put your 12 medium white potatoes sliced 1/8" thick(mandolin works great for this although I have yet to own one) Add to the potatoes...Seasoned salt, pepper and 2 Tbs of melted butter. Mix thoroughly. In a 9x13 pan spread out half of the potatoes then add about 1/2 cup of grated cheese on top. Add remaining potato mixture...spread out evenly. Bring to a boil 1 cup of milk(I used fat & lactose free), pinch of nutmeg, 2 pinches of herb seasoning. When this mixture has been brought to a boil, remove it from stove and evenly pour over the potatoes. Add another 1/2 cup of grated cheese on top of the potatoes. Bake uncovered in  a 425* oven or grill for about 40 mins or until potatoes are soft.
