Quinoa Salad

I make this quite often. Alternative to orzo, rice, or couscous.
1/2 cup quinoa
1 cup water
1 tbls butter
Bring to boil. then turn down to a simmer for 15 mins or until the seeds have popped to translucent.
in separate bowl add diced garlic, sun dried tomatoes, black olives, diced green onions, sliced wee carrots, diced fresh tomatoes, couple splash red wine vinegar, couple splash olive oil, seasoning of your choice...me mrs. dash
I cooked the above ingredients just a little....until the carrots al dente.
stir it all together.
