Chicken Cornbread Casserole

  Almost didn't have a photo for ya!! Today's Cornbread casserole is really easy!!  9x13 pan.....or a long deep casserole dish!! For Chicken: Cut up in bite size pieces 2-3 lbs of boneless, skinless, chic breast then season, cook until done thru.....lay in bottom of your casserole dish.... Now add 1qt of tomato sauce, 1 pint of corn, two chopped up jalapeno peppers or use pepper flakes about a tsp (all optional), Now comes the cornbread.... You can just use 2 boxes of cornbread mix...use as directed Otherwise..Mix 2cups of corn flour, 2eggs...mix together then i added water until desired batter look....then i added about cup of shredded cheese and mix!! Pour the batter on the top of this casserole evenly...if it is thick you can thin it by adding water or just dollup it on top of casserole..... Bake at 350 until the cornbread is done!! Hubby says he thinks it is better today....stuffed himself!!

Cheesy Broccoli Ham Lasagna

  Have ham leftover from our thanksgiving supper (early due to family) so i made cheesy ham broccoli lasagna 2 tbs butter in pan add onions diced cook until softened Can add mushrooms too Then add 3 Tbs of flour...cook one minute Oops forgot....add 3 oz of cream cheese Then add 2 cups of milk...whisk in your milk until thick Add chopped ham...i added about 2 cups worth...up to your eyes likeness! Shut it off.... I spooned of ham mix, just enough in the bottom of my baking pan, to keep noodles off bottom Then lay uncooked lasagna noodles on top of that...then shredded cheese then about half of ham sauce Then i added cooked broccoli....then noodles, the rest of ham sauce then good layer of cheese. I baked in 350* oven until i could poke clean through the noodles.... So Cheesyyy!!

Stuffed Green Peppers

As some of you know, i am a lazy cook! This dish takes very little time to prepare but a bit of time to bake. I, personally , am not a fan of green peppers however, my husband is. I love the flavor not the texture. He eats my shell! Recipe: 6 green peppers, cored from stem top...clean carefully! 1 lb ground burger, uncooked 1 can of corn (vegie of your choice) 1 onion, chopped or diced 32 oz tomato sauce 1 cup of rice, brown/white/quick Dump the ground in a bowl, add rice, corn, onion Smoosh it together until combined really good! Spoon the mix into the tops of the peppers...use your fingers to get them stuffed. Spray your dish with an oil....Put peppers in a deep dish for baking.... Pour the tomato sauce over the top of everything....the liquid should hit almost the top of the green peppers. (Add water to make it full) Bake at 350* for about an hour. To know it is done...the rice will have expanded, the sauce will be much less and the green peppers are soft and

Meat Stuffed Squash

Recipe: 1 spaghetti squash (cleaned of its seeds), halves 4 small acorn squash (cleaned), halves 1lb. ground burger 1 onion seasoning cheese, sliced dozen cherry tomatoes Cook burger, onion and seasoning until cooked through. add cherry tomatoes, stir, turn off heat...let set for couple minutes. place squash halves into long casserole dish. Scoop meat mix into centers of squash. Bake 350 until squash is tender (check with fork) add cheese slices and melt remove from heat and let set for few minutes. Enjoy!

Fruity Wontons

1 tsp. pie filling then wrap corner to corner and repeat..sealing with cornstarch/water drop. Fry up in oil...until golden brown. Enoy!!

Chicken Egg Rolls

This was my first time making egg rolls. First I cut up chicken breasts into small pieces and cooked thoroughly. Then added a couple Tbls. of soy sauce, 1 tsp. black pepper, 1/4 cup of wine(added 1 Tbls. of cornstarch to the wine). In a separate pot I cooked a bit of shredded broccoli, cabbage, carrots (pkg. at the Walmart) in butter. Then added a jar of canned carrots. I then combined the two in one pan. Let it cool for about an hour or so. I put about a Tbls. of mix in the corner and to wrapping it like a gift box. Sealing it with a drop of cornstarch/water mix. Gently place in my pan of oil and fry until golden. Enjoy!! Ours passed the food guru at our house! ;)

Popeye Lasagna

This was a tasty dish! Greens in the dish that even our "picky" eaten friend gobbled up! Recipe:  1/2 box lasagna noodles 1 quart spaghetti sauce 1/2 lb to 1 lb spinach leaves 1 lb. hamburger ground 1 large onion or 5-6 green onions 1 lb. shredded cheese 1 16oz. cottage cheese Spread a little sauce in the bottom of 13x9 pan Layer uncooked noodles, uncooked burger (crumbled), tomato sauce, spinach, cottage cheese, shredded cheese...repeat until pan is full. Bake in 350* oven or grill for an hour to hour and half .or until noodles/meat are cooked
