Basic Enchilades


Whole Chicken, cooked and  de-boned
4-6 Roma tomatoes, sliced and diced
1lb cheese, shredded
8 corn tortillas
1 can of beans, drained and rinsed
1 onion, sliced and diced
1 16 oz. salsa
black olives, optional

Cook onions in a bit of butter until translucent. add beans, chicken(i shred mine a little bit), and a couple tomatoes. Once warmed up, take a heaping spoon(ladel) full and add to tortilla then roll up. place in pan. repeat until pan is full. sprinkle layer of cheese. smother in salsa (pour over the top). add remainder of cheese. Cover all of this with remainder of tomatoes.
Throw in oven (350*) for about 20-30 mins. or until cheese melts.
