Mary's Hillbilly Coating

As some of you know, I create new recipes all the time. Sometimes good and once in awhile not so good! One word "yummy"! Recipe:  2 cups flax seed flour 1 cup cornmeal flour 1/4 cup mrs. dash 1/8 cup mixed pepper Throw in a gallon bag. Throw whatever it is you are trying to coat. Fry in hot hot shortening or corn oil! Viola! it is done!!

Easy Cheesecake With Blueberry Sauce

This is a bake and go kind of cheesecake! 1 (8oz) package of cream cheese, room temp 2 eggs 2tsp vanilla 1/2 cup sour cream 1/4 cup sugar (can substitute if you wish) Mix these ingredients together. I use a potato masher to mesh the cream cheese up. Then use a hand beater to finish. It is normal to see small pieces of cream cheese in your mix. they look like little lumps in your batter...A-ok! I used a ready made graham cracker crust( a small one will work)....pour the batter in it. Take another pan about the same width and depth as your pie pan and fill half with water. place in your oven to warm. once warm, place pie pan down in water. think double boiler method. keeps the crust from burning under your cream cheese. Bake for 30 mins in a 350 degree oven/grill. check with tooth pick.....if it comes out wet...give it 10 mins...if it comes out with a little bit of cake on it.....like crumbly type.....it is done. let cool completely! After mine cooled I set in fridge

Basic Enchilades

Whole Chicken, cooked and  de-boned 4-6 Roma tomatoes, sliced and diced 1lb cheese, shredded 8 corn tortillas 1 can of beans, drained and rinsed 1 onion, sliced and diced 1 16 oz. salsa black olives, optional Cook onions in a bit of butter until translucent. add beans, chicken(i shred mine a little bit), and a couple tomatoes. Once warmed up, take a heaping spoon(ladel) full and add to tortilla then roll up. place in pan. repeat until pan is full. sprinkle layer of cheese. smother in salsa (pour over the top). add remainder of cheese. Cover all of this with remainder of tomatoes. Throw in oven (350*) for about 20-30 mins. or until cheese melts.
