Recipe: 1 spaghetti squash (cleaned of its seeds), halves 4 small acorn squash (cleaned), halves 1lb. ground burger 1 onion seasoning cheese, sliced dozen cherry tomatoes Cook burger, onion and seasoning until cooked through. add cherry tomatoes, stir, turn off heat...let set for couple minutes. place squash halves into long casserole dish. Scoop meat mix into centers of squash. Bake 350 until squash is tender (check with fork) add cheese slices and melt remove from heat and let set for few minutes. Enjoy!

Mediterranean Pizza

Thin crust: I used this crust recipe from http://allrecipes.com/recipe/257198/thin-crust-pizza-dough/ It is as follows: Ingredients 1 teaspoon active dry yeast 1/4 teaspoon white sugar 3/4 cup lukewarm water 2 cups all-purpose flour, divided 1/2 teaspoon salt Directions Dissolve yeast and sugar in hot water in a bowl. Let stand until yeast forms a creamy foam, 5 to 8 minutes. Mix 1 3/4 cup flour and salt in a large bowl. Pour in yeast mixture; mix well until dough comes together. Transfer dough to a floured surface and knead until smooth, adding remaining 1/4 cup flour if dough is too sticky, about 2 minutes. Roll dough into a 12-inch circle. Easy Crustless Cheesecake

Crustless Cheesecake with Blackberry Topping 8 oz Cream Cheese, Softened 1/3 C sugar or substitute 2 tsp. Vanilla 1 C. Sour Cream 1 egg In a bowl mix all the above ingredients together. Pour into a greased pie plate. Bake in a 350* oven for 35-40 mins. Cool for about 20-30 mins. Serve with your choice of topping Enjoy!
