Mary's Brown Rice Medley
2 cups Brown Rice
4 cups Water
1 Can Chicken,drained and flake with fork
1 Can Olives, sliced
1 Can Kidney Beans, drained & rinsed
1 cup Broccoli, chopped & cooked
1/8 Cup Extra Virgin Olive Oil
1/2 Cup Sun Dried Tomatoes in oil
Salt/Pepper as needed
This dish can be served Hot or Cold.
Tip-- while rice is cooking prepare your other ingredients!
Start with preparing your brown rice.....Add water, smidge of butter and rice to your pan to boil. Once it is boiling, turn the heat down to a simmer. Add your lid. Simmer until the water is gone. To check, take pan and tip sideways...do you see liquid? if so not ready yet. Time? oh about 15-20 mins or so total cook time....
When rice is done.....dump into a large bowl.
Let the mixing begin. Add all above ingredients to your rice. Mix and Serve.
Tip- if you want Cold...prepare a few hours ahead and cool in fridge!
