Easy Cheesecake With Blueberry Sauce

This is a bake and go kind of cheesecake! 1 (8oz) package of cream cheese, room temp 2 eggs 2tsp vanilla 1/2 cup sour cream 1/4 cup sugar (can substitute if you wish) Mix these ingredients together. I use a potato masher to mesh the cream cheese up. Then use a hand beater to finish. It is normal to see small pieces of cream cheese in your mix. they look like little lumps in your batter...A-ok! I used a ready made graham cracker crust( a small one will work)....pour the batter in it. Take another pan about the same width and depth as your pie pan and fill half with water. place in your oven to warm. once warm, place pie pan down in water. think double boiler method. keeps the crust from burning under your cream cheese. Bake for 30 mins in a 350 degree oven/grill. check with tooth pick.....if it comes out wet...give it 10 mins...if it comes out with a little bit of cake on it.....like crumbly type.....it is done. let cool completely! After mine cooled I set in fridge...

Jalapeno Poppers

Recipe for Poppers: 24 jalapenos , cleaned out and ready to fill 1 small tub of cream cheese 24- 1/2 slices of bacon take a teaspoon and put a dab of cream cheese in jalapeno ( never rub your eyes when handling these), place long ways on your 1/2 slice of bacon and fold over end to meet in the middle (look at pics ). We use a fish rack for putting on grill but a pan will work too. Cook over direct heat until the bacon is cooked and the peppers are soft. Enjoy!

Easy Crustless Cheesecake

Crustless Cheesecake with Blackberry Topping 8 oz Cream Cheese, Softened 1/3 C sugar or substitute 2 tsp. Vanilla 1 C. Sour Cream 1 egg In a bowl mix all the above ingredients together. Pour into a greased pie plate. Bake in a 350* oven for 35-40 mins. Cool for about 20-30 mins. Serve with your choice of topping Enjoy!

Creamy Chicken Bacon Enchilada's

4-boneless, skinless chicken breasts, chopped 1 pkg of bacon, chopped 1 onion, chopped 1/2 large green pepper 6 mushrooms, sliced 1 healthy size tsp of diced garlic 3 med heat chili peppers, sliced add all of these to a pan to cook until the meat is done. I love color in my food don't you? 1 pkg of tortillas 1/2 pkg of cream cheese Spread cream cheese in the middle of each tortilla. then add the cooked mixture to each one and roll it like an enchilada....stack next to each other until all tortillas are used. For this one I had 8 to fit in a pan 13x9. *If you have leftover meat then spread over the top of enchilada's. Spread grated cheese lightly over top of this. 1 Jar (Quart Size) Salsa Spread this over the whole pan of enchilada's. Place the pan in a 375* oven for 30 mins. Pull it out and add a healthy layer of grated cheese to the top of this and place back into oven for another 10 mins or until cheese is ...
