Sweet/Spicy BBQ Ribs

Image
Pork Ribs I have one word for ya "heavenly". If you don't like spicy then don't try these!  These are a perfect mix between sweet and spicy. The glaze on the outside is gooey and the ribs were juicy! Ok now for the recipe.....1/2 rack beef or pork ribs don't matter(I did both) Sweet/Spicy Rub...2 handfuls(good ones probably about a cup or cup and half) of brown sugar, 2-3 heaping tablespoons of pepper flakes, 1 tbls of black pepper, 2 tbls of paprika...mix well together rinse your ribs well then coat your ribs with rub( if you like for less mess do this in a gallon plastic bag) I don't have rib racks or pans to do them in so I used my racks in my oven( be prepared for clean up)...I covered the BOTTOM one with aluminum foil to catch drippings then took top rack and cleaned it real well. Turn oven on broil (500*) After coating the ribs with "Rub" I placed the ribs directly on the rack( the idea is letting the...

The Best Pork Chops

Image
4-1" thick pork chops ( as you can see mine were little thin, 12 is what I used) 2-4 large eggs(depending on how many chops) salt/pepper( montreal seasoning works too) onion powder garlic powder italian seasoning or herb seasoning 1 C. of seasoned bread crumbs 1 C of parmesan in a can Beat 2 eggs together in a bowl In another bowl mix the remainder ingredients together Dip pork chops in eggs then place in bowl of bread crumb mix make sure all is covered with breading mix Place in a greased pan(use pam spray if handy) When you are finished with this process place the pan or pans in a 400* oven for 15 mins then carefully flip chops and cook for another 15-30 mins or until done (golden brown) These turned out really moist!!! Three people eating and only 1 chop left! Original idea come from myincrediblerecipes.com/baked-parmesan-crusted-pork-chops/

Spicy Chicken, Beef or Pork

Image
This recipe calls for meat...but I would suppose you could use Tofu or just plain vegies with a little adjustment to the soy sauce. This was very tasty!! Recipe: 1 lb. Meat-sliced into strips 1 large onion cut into strips or chopped 1 large green pepper, chopped (optional) couple small carrots or 1 large carrot, sliced or chopped oil In a pan or wok(chinese cooking pan) add oil. When oil is hot add meat and onions...cook until done then add pepper, carrots cook until a bit soft. Let simmer while you make your soy mix In a bowl mix these ingredients together. 1/4 C Soy sauce 1/2 C Water 2 Tsp red chili flakes 2 tsp Cornstarch Add this mix to your meat mix.then add about a dozen snow peas..simmer until this gets a bit thick then remove from heat. Serve on bed of rice!

Oven Baked Lasagna

Image
OVEN BAKED LASAGNA   In a fry pan add a touch of oil/grease, add ground burger (1lb), 1 onion, chopped, 2 Tbls diced garlic cook thoroughly add couple good pinches of mix italian herb seasoning(parsley, thyme, oregano, basil, etc) then add 32oz of tomato sauce( pasta sauce will work too). Simmer about 5 mins.... In a bowl mix 2 cups of mozzarella cheese and 12 oz cottage cheese and 1 egg(not a big deal if out of eggs be brave go without) mix together.... I found that the cheeses have plenty of salt no need to add extra...but you may want to add some pepper (1 tsp) here.   In the bottom of a 9x13 pan you are gonna layer these items...... 1/2 of meat sauce first then put about 4 noodles wide(long ways) add cheese mix then meat, noodles, cheese mix. Here you add another 2 cups of mozzarella cheese and garnish however you like. As you see I used fresh tomatoes. Bake in 350* oven for 45 mins covered then take cover off and bake another 10 mins. When it is d...

Burger Stew

Image
BURGER STEW Some may call this soup, it isn't thick by no means but it is filling! There is a lot of goodies.... In a large pot fry up some burger with onions, green peppers, a couple TBLs of garlic. Cook until burger is done...now add either canned potatoes or fresh chopped potatoes, green beans or corn, and canned tomatoes.I added a tomato juice for my liquid but you can just add water instead. Depending on family size start with 1lb of burger for 2-3 up to 3lbs for 10+ people. This is a great dish to experiment with.....add different vegies to the potatoes and meat. Be sure to test taste for salt and seasonings.....This is a really tasty soup and fills a person up! Makes a great leftover too! Add rolls for your side dish.....
