No Bake Chocolate Oat Cookies

I found this recipe the other day and had to try it! I am trying not to eat junk but sometimes you just need a little something to get ya through. Here is one of my solutions. These little goodies are great and are so simple to make. I changed a one thing from the original recipe . The recipe called for coconut oil and I used butter as I do not have coconut oil on hand. This little treat satisfied my sweet tooth. And most anything that uses honey I will try at least once!

Alpine or Pine Tree (Hot Alcohol Beverage)

 In the Rocky Mountains they are called "Alpines" or as FIL calls them "Pine Trees" ( we have since decided if you add Fireball to your hot chocolate they are Pine Trees).   Alpines Recipe:1 coffee mug of hot water, add hot chocolate mix and 1 shot of peppermint schnapps (1/2 as much if you don't like it strong....this requires experimentation to your taste buds) Pine Trees Recipe: 1 coffee mug of hot water, add hot chocolate mix and 1 shot of Fireball   (1/2 as much if you don't like it strong....this requires experimentation to your taste buds) This is a required drink here in the winter in our house!  I tried the recipe from  Ozark Mountain Family Homestead  and first off this recipe is really easy to say the least. Very Very Tasty!! Salty & Sweet, Buttery & Chocolatey.... I did do a couple things different in that I split the recipe in half as I had a smaller oven and pan. I used crushed peanuts as a topper. Oh and caution on the butter/brown sugar mix..DO NOT LEAVE IT ALONE. Constantly stirring is required and a timer!!! Jus sayin'! Once you get things right this recipe take no time at all to make...I think the longest part was the cooling process which I used my fridge for that.   It can be made as Peppermint, Chocolate, Toffee, Cherry, or whatever type of baking chips you prefer.  It’s best to use a cookie sheet with shallow sides and then line the bottom of it with saltine crackers.   In a saucepan, combine 1 cup butter and 1 cup dark brown sugar.   Bring it to a boil and boil for 3 minutes.   Immedia...
