Mock Lasagna

I really enjoy this lasagna! Have you ever wondered what "lasagna" means? Definition: -a baked Italian dish consisting of wide strips of pasta cooked and layered with meat or vegetables, cheese, and tomato sauce. -can also refer to a dish made with several layers of lasagne sheets alternated with sauces and various other ingredients. I have been changing our way of eating as of late. We have always been vegie eaters with meat. We both have noticed when we eat anything made with flour, we end of feeling poorly. A change was needed. We are not saying to completely take it out but limit it to once in a while.  Mock Lasagna is what I came up with. Recipe: 2 medium zucchini's sliced long ways thinly(use the mandolin slicer, if you have one)  1-15 oz Ricotta cheese 2 eggs 1-container of fresh mushrooms 1- onion, chopped 1lb of cooked ground- 2 lbs if it is chicken or turkey 1 qt of tomato sauce Herbs for seasoning Pep...

Light Scalloped Potatoes

I had to laugh at my title because this recipe being "light" is like going to McD's asking for a Quarter Pounder with Fries and a Diet Coke! Ha Ha In a large bowl put your 12 medium white potatoes sliced 1/8" thick(mandolin works great for this although I have yet to own one) Add to the potatoes...Seasoned salt, pepper and 2 Tbs of melted butter. Mix thoroughly. In a 9x13 pan spread out half of the potatoes then add about 1/2 cup of grated cheese on top. Add remaining potato mixture...spread out evenly. Bring to a boil 1 cup of milk(I used fat & lactose free), pinch of nutmeg, 2 pinches of herb seasoning. When this mixture has been brought to a boil, remove it from stove and evenly pour over the potatoes. Add another 1/2 cup of grated cheese on top of the potatoes. Bake uncovered in  a 425* oven or grill for about 40 mins or until potatoes are soft.

Mary's Lasagna

This lasagna only has 6 noodles in it! The rest is goodies and it stands up really well. What I mean is it is firm when you are done even tho it has little bit of noodles. And it tastes yummmy!! As she sings that at the top of her lungs in Opera style! Recipe:  1-Lb. ground sausage 1-Lb. ground burger 1 large onion, chopped 3 Tbs. minced garlic olive oil Add oil to your cooking pan...heat just a wee bit then add onion. cook for 2-3 mins then add your ground meats and cook thoroughly. Add minced garlic leave on heat for 2-3 mins. Remove from heat. 15 oz. Ricotta Cheese 1-2 eggs 1 quart pasta sauce or marinara sauce  2 Tbs Italian seasoning or Herbal seasoning 2 tsp black pepper 1/2 tsp salt mix Ricotta cheese and eggs together until smooth. Add pasta sauce and seasonings to this mix and stir real good..put aside for layering process   1-Lb. Mozzarella Cheese, Shredded 1/2 C. Cheesy Pepper Onion Venison

About a Pound or Two of Venison Chunks (cubes or very small steaks)thawed or frozen works too! 1 large onion, sliced 2 green peppers, sliced Seasoning of your choice oil Cheese- You decide how much! Heat your oil add meat and brown both sides of meat. Add onions and peppers and seasoning.  Turn down to a simmer. Cover with a lid checking periodically so as not to burn anything. Stir it often. When the meat is done as well as onions and peppers turn off heat.  Add cheese to the top measuring at your discretion. Replace the lid and let the cheese melt. Let sit for about 5 mins more with lid off and serve! Enjoy!

Creamy Cheese Chicken

"Creamy Cheese Chicken" ! In a greased pan add boneless chicken breast then top with 2 c cheese of your choice or 8 slices. In separate bowl mix 1 can of cream soup of your choice no water instead add 1 c of white wine. Add 1 tbsp of montreal chicken seasoning and mix well (until creamy). Pour this mixture on top of your cheesy chicken. Cover and put in a 350* oven for at least an hour or until chicken is done. Tacosagna

On today's menu, I made "TACOSAGNA". I found this recipe on Mennonite Girls Can Cook . It was yummy! I made some adaptations to the recipe as we are still trying to watch our carb intake a bit but didn't want to ruin the "ambiance" of the dish. My recipe is as follows: 2 lbs of ground cooked, 1 packet of taco seasoning added to meat, 2 cans of corn added to meat, 1-12oz jar of salsa added to meat and cooked for about 10-15 mins. Then in separate dish I lined the bottom with meat mixture, not a lot just enough for a base, then added two reg size flour tortillas on top of meat. Added meat mix, grated cheese and then about 1/2 cup of sour cream spread out on this layer. Another two tortillas then meat mix and cheese and at this point should have run out of meat and cheese and pan is full!!! Cover and put in oven or on a grill at 350* for about an 45mins-1hr.

Allie's Enchiladas

 Recipe....so so good! 1 pkg of bacon, cooked 6 boneless chicken breasts, cooked 1 large jug of salsa, 16 oz? 2 cans black beans 1 bundle of green onions, chopped 1 red pepper, chopped 1 can of sliced olives, drained 3 tsp of minced garlic or 3 cloves of garlic chopped 1 pack med size tortillas 1 Large bag of grated cheese I cook my bacon and chicken together then add my vegies and cook for a bit. then add the beans. In your tortillas prepare to fill..what I do it lay in dish/pan you are baking this in...add a couple tablespoons full, add salsa and cheese then roll up moving to one side of the dish and repeat until your dish/pan is full. Bake in a 350* oven for 30 mins.....add cheese and leftover salsa to the top and bake another 5-10 mins or until cheese is good and melted! Let cool for about 10 mins...gives this dish time to set up for ease of serving. Enjoy!  

Easy Peasy Pizza

When my step mom wanted something quick and easy for six kids she made these..... Little Mini Pizzas.... Even us kids would help make these. 1- 6 package english muffins or however many you need for your family   1 can of pizza sauce  1 lb of hamburger, cooked (will have some left over unless you use more muffins) shredded cheese toppings of your choice get creative! I toast my muffins before putting anything on them. Not soggy then. Put a tablespoon of sauce on each one then a large pinch of cheese then your hamburger and toppings.  Broil for about 5 mins or less... just until the cheese is melted! I wouldn't recommend microwaving makes the muffins chewy. So Easy!!!

Creamy Chicken Bacon Enchilada's

4-boneless, skinless chicken breasts, chopped 1 pkg of bacon, chopped 1 onion, chopped 1/2 large green pepper 6 mushrooms, sliced 1 healthy size tsp of diced garlic 3 med heat chili peppers, sliced add all of these to a pan to cook until the meat is done. I love color in my food don't you? 1 pkg of tortillas 1/2 pkg of cream cheese Spread cream cheese in the middle of each tortilla. then add the cooked mixture to each one and roll it like an enchilada....stack next to each other until all tortillas are used. For this one I had 8 to fit in a pan 13x9. *If you have leftover meat then spread over the top of enchilada's. Spread grated cheese lightly over top of this. 1 Jar (Quart Size) Salsa Spread this over the whole pan of enchilada's. Place the pan in a 375* oven for 30 mins. Pull it out and add a healthy layer of grated cheese to the top of this and place back into oven for another 10 mins or until cheese is ...

Parmesan Squash

PARMESAN SQUASH   Slice squash into rounds or cut in half. Add oil to your pan and get hot then add your squash to cook until soft, stirring occasionally. Season with pepper & salt, stir, then add Parmesan ( grated Parmesan works best but imitation will do) to the top and cover to melt.
