Jalapeno Poppers

Recipe for Poppers: 24 jalapenos , cleaned out and ready to fill 1 small tub of cream cheese 24- 1/2 slices of bacon take a teaspoon and put a dab of cream cheese in jalapeno ( never rub your eyes when handling these), place long ways on your 1/2 slice of bacon and fold over end to meet in the middle (look at pics ). We use a fish rack for putting on grill but a pan will work too. Cook over direct heat until the bacon is cooked and the peppers are soft. Enjoy!

Bacon Wrapped Chile Shrimp Poppers

When living out here like we do a Ranch Wife has to get creative in the kitchen. Lately, Wonder Woman has been arriving every afternoon to cook. Yesterday, Sunday she came up with an oldie but goodie. Bacon wrapped Shrimp with a kick! Start with a large shelled shrimp, a strip of mild chile pepper (heat of your choice really)(the kind you make chile rellenos with, can find them in a can I believe ), a slice of bacon.....in order wrap around each other and stick a toothpick thru to hold. Throw on BBQ until you see the shrimp is done.....yummy!Enjoy! Ps these can be done in the oven as well 400* until shrimp is done.... Can add cream cheese between shrimp and chile pepper.....Enjoy!

Creamy Potato Soup

Recipe: 1 lb bacon, 2 large onions, 2 qts of potatoes, 1/2 can evap milk, 1 cube butter, 5-6 carrots, celery(optional), flour, salt & pepper Crockpot or Stew pot Out of my family cook book Boil carrots & potatoes(only if using raw) do not drain   Fry up bacon then chop Cook up chopped onion in bacon grease Add vegies to the crock, draining off the onion from bacon grease Add bacon Melt butter for Rue(thickener) gradually add flour until thick over low heat do not burn! Add Rue, 1/2 can milk and add water until full to the top. Add salt & pepper and stir!   Cook in crockpot for 3-4 hrs it will thicken as it cooks so stir occasionally. If you decide to cook in stew pot keep a eye on it so it won't stick to bottom of pan. Med heat until it boils then simmer for about 45 mins stirring occasionally.
