Ol' Fashion Grain Bread

I am one of those who was born in the wrong century! I should have been a pioneer! I love making something out of nothing.....most of the time it turns out so good! I have learned to write my recipes down as I make them soooooo if they turn out yummy I can share with you all!! Today's recipe comes from seeing the packaged Oat Bread in the store. I thought heck I can make something like that but better! No additives or preservatives! Just plain ol' goodness and love! I did however, use a bread machine to get it ready. I cheated, I know, my hands, shoulders and neck can't take kneading anymore. I used our woodstove for the rising process and our bbq grill for the baking (some of you know we do not own a conventional oven). Recipe: I put in machine in order 3 TBLS butter, sliced 1 Egg 1 Cup of warm water 1/8 Cup of honey 1/2 cup of Oat Flakes 3TBLS Black Chia Seeds 2 Tbls Sunflower seeds or whatever looks good 2 Tbls Flax seed Meal 1 tsp of salt 3 Cups Whi

Bad Cornbread

I had no idea that cornbread in a box will go bad. Ha Ha Part of taking care of your goods in your cabinets is finding things like this and either using them or throw them out. Well I can say for sure....if you have an expired Jiffy cornbread....it will not come out the way you would expect! I usually make mine from scratch but found this box from something someone gave me so without looking at the box I went to making it! Lesson learned!

Lazy, Lazy Chili

I found a bag of chili sauce and it has an expiration date on it! Feb 28, 2018. Needs to be used. This morning I threw on a pot of beans..... 2 cups of dry beans, 6 cups of water(I added 5 chicken bouillon cubes). Turn on high to boil. Let it boil for about 20-30 mins then simmer for about 4 hrs. add the chili sauce and cut up an onion too. Let this get good and hot or until onion is soft. Done! Enjoy!

Got The Flu-Chicken Stew

1 whole chicken, boiled, de-boned 1 whole onion sliced and diced 2 qts potatoes 1 qt carrots 2 cups frozen peas 2 cups frozen corn 3 tbls mrs dash salt pepper(you decide) 8 qt pot 1. I used a frozen bird added just enough water to cover the bird about 3-4 inches above it. Add seasonings. Bring to boil. It is done when bird falls apart. Strain from liquid(save for next step), then de-bone. 2. Take left over liquid and add all veggies in list above. Bring to a light boil...don't over cook. Add more liquid if it looks too thick. Needs to look like soup!! 3. add meat to soup. let sit for about 20 mins. 4. serve and eat! Enjoy!! *there are variations to this soup...add garlic, celery, green onion, turnips, sweet potatoes, butternut squash, zucchini, yellow squash....use your imagination! And watch your loved ones get and feel better! 

Red Wine Creamy Chicken

3-4 Boneless Chicken 1/2 Cup Red Wine 1 Cup Mayo 3 Tbls. Mrs. Dash 1/2 Cup Parmesan Cheese 1 lb. Asparagus, Fresh 1 Onion, sliced Brown chicken breasts in a skillet. Add onions then season, cheese, asparagus then add mayo/ wine mix. Bake in 325* oven until meat is 180* about 30 mins

Refrigerator Clean Out Soup (Vegetable Soup)

5 Green Onion, diced 2 Tbls. diced garlic 3 Tbls. olive oil 1 gt jar of home canned corn 1 qt. whole tomatoes 1 qt. chunked potatoes 1 qt. carrots 1 qt. beets 1 qt green beans 2 small bunches of broccoli, cut up bite size pieces 1/4 cabbage sliced thin 4 small peppers, yellow,red,orange, diced 2 tsp. cayenne 2 tsp. mrs. dash salt pepper mix add liquid to cover everything if you need too. Bring to a boil, then simmer for about 30 minutes or until cabbage and broccoli are soft.
