Easy Bake Chicken Legs

5 lbs chicken legs, defrosted 1 gal. bag add to the bag, 2/3 cup flour, 1 tsp. black pepper, 1 tsp. paprika, 1 tsp. garlic powder, 1 tsp. salt, 1 tsp. parsley... seal bag and mix In two 13x9 pans...smear a cube of butter each pan......add two drums to the bag and coat then place in pan....repeat until pans are full. Bake 450* oven or grill ....turning every 15-20 minutes....for 1hr or until chicken reaches 180* internally Enjoy!

Baked Catfish

My mother in law was looking for a catfish recipe that was baked not fried. So I thought that I would come up with one. Through the many years of eating baked fish, we always went the simple route. Lemon, seasonings and butter. Simple and quick! Recipe: 4 catfish fillets, defrosted ( I stick mine in micro for about 4 mins from frozen stage) 1/2 cube of butter, sliced into 4 pieces 1/4 cup lemon juice...to your desired taste mrs. dash and mixed pepper Spread butter in the bottom of a 13x9 pan. Place fish on top of butter. Pour juice on top of fish then season. Bake at 350 for 20-30 mins until fish is flaky. No cover required! Delish!! Enjoy!

Corn Tortilla Casserole

Dozen corn tortillas 1 lb. shredded pork 3 cups shredded cheese or more if you prefer 1 can olives, sliced 1 can of mushroom soup 1- 16 oz salsa Roll stuffed corn tortillas with pork and cheese and place in bottom of greased pan until it is filled. Mix soup and salsa together. Pour over top of tortillas. Spread cheese over this. Spread olives over this. Bake 350* for 30 minutes

Quinoa Salad

I make this quite often. Alternative to orzo, rice, or couscous. 1/2 cup quinoa 1 cup water 1 tbls butter Bring to boil. then turn down to a simmer for 15 mins or until the seeds have popped to translucent. in separate bowl add diced garlic, sun dried tomatoes, black olives, diced green onions, sliced wee carrots, diced fresh tomatoes, couple splash red wine vinegar, couple splash olive oil, seasoning of your choice...me mrs. dash I cooked the above ingredients just a little....until the carrots al dente. stir it all together. Enjoy!!

Infused Porridge

1 3/4 cup water 1 cup quick oats honey 1 tbls. butter Bring water, 1 Tbls. Honey and butter to a boil. Then add oats and turn down to a simmer. Stir in oats until foaming quits (about  a minute) then simmer just until it feels like it is thickening a bit. Shut off and let sit for about 5 mins. If you want thick like spackle let sit for longer. Depending on your oats, they will be a little runny or thick. Honey infused porridge! Enjoy! I top mine with honey while Mtn man likes brown sugar!
