Meat Stuffed Squash

Recipe: 1 spaghetti squash (cleaned of its seeds), halves 4 small acorn squash (cleaned), halves 1lb. ground burger 1 onion seasoning cheese, sliced dozen cherry tomatoes Cook burger, onion and seasoning until cooked through. add cherry tomatoes, stir, turn off heat...let set for couple minutes. place squash halves into long casserole dish. Scoop meat mix into centers of squash. Bake 350 until squash is tender (check with fork) add cheese slices and melt remove from heat and let set for few minutes. Enjoy!

Fruity Wontons

1 tsp. pie filling then wrap corner to corner and repeat..sealing with cornstarch/water drop. Fry up in oil...until golden brown. Enoy!!

Chicken Egg Rolls

This was my first time making egg rolls. First I cut up chicken breasts into small pieces and cooked thoroughly. Then added a couple Tbls. of soy sauce, 1 tsp. black pepper, 1/4 cup of wine(added 1 Tbls. of cornstarch to the wine). In a separate pot I cooked a bit of shredded broccoli, cabbage, carrots (pkg. at the Walmart) in butter. Then added a jar of canned carrots. I then combined the two in one pan. Let it cool for about an hour or so. I put about a Tbls. of mix in the corner and to wrapping it like a gift box. Sealing it with a drop of cornstarch/water mix. Gently place in my pan of oil and fry until golden. Enjoy!! Ours passed the food guru at our house! ;)

Popeye Lasagna

This was a tasty dish! Greens in the dish that even our "picky" eaten friend gobbled up! Recipe:  1/2 box lasagna noodles 1 quart spaghetti sauce 1/2 lb to 1 lb spinach leaves 1 lb. hamburger ground 1 large onion or 5-6 green onions 1 lb. shredded cheese 1 16oz. cottage cheese Spread a little sauce in the bottom of 13x9 pan Layer uncooked noodles, uncooked burger (crumbled), tomato sauce, spinach, cottage cheese, shredded cheese...repeat until pan is full. Bake in 350* oven or grill for an hour to hour and half .or until noodles/meat are cooked

Ol' Fashion Grain Bread

I am one of those who was born in the wrong century! I should have been a pioneer! I love making something out of nothing.....most of the time it turns out so good! I have learned to write my recipes down as I make them soooooo if they turn out yummy I can share with you all!! Today's recipe comes from seeing the packaged Oat Bread in the store. I thought heck I can make something like that but better! No additives or preservatives! Just plain ol' goodness and love! I did however, use a bread machine to get it ready. I cheated, I know, my hands, shoulders and neck can't take kneading anymore. I used our woodstove for the rising process and our bbq grill for the baking (some of you know we do not own a conventional oven). Recipe: I put in machine in order 3 TBLS butter, sliced 1 Egg 1 Cup of warm water 1/8 Cup of honey 1/2 cup of Oat Flakes 3TBLS Black Chia Seeds 2 Tbls Sunflower seeds or whatever looks good 2 Tbls Flax seed Meal 1 tsp of salt 3 Cups Whi

Bad Cornbread

I had no idea that cornbread in a box will go bad. Ha Ha Part of taking care of your goods in your cabinets is finding things like this and either using them or throw them out. Well I can say for sure....if you have an expired Jiffy cornbread....it will not come out the way you would expect! I usually make mine from scratch but found this box from something someone gave me so without looking at the box I went to making it! Lesson learned!

Lazy, Lazy Chili

I found a bag of chili sauce and it has an expiration date on it! Feb 28, 2018. Needs to be used. This morning I threw on a pot of beans..... 2 cups of dry beans, 6 cups of water(I added 5 chicken bouillon cubes). Turn on high to boil. Let it boil for about 20-30 mins then simmer for about 4 hrs. add the chili sauce and cut up an onion too. Let this get good and hot or until onion is soft. Done! Enjoy!

Got The Flu-Chicken Stew

1 whole chicken, boiled, de-boned 1 whole onion sliced and diced 2 qts potatoes 1 qt carrots 2 cups frozen peas 2 cups frozen corn 3 tbls mrs dash salt pepper(you decide) 8 qt pot 1. I used a frozen bird added just enough water to cover the bird about 3-4 inches above it. Add seasonings. Bring to boil. It is done when bird falls apart. Strain from liquid(save for next step), then de-bone. 2. Take left over liquid and add all veggies in list above. Bring to a light boil...don't over cook. Add more liquid if it looks too thick. Needs to look like soup!! 3. add meat to soup. let sit for about 20 mins. 4. serve and eat! Enjoy!! *there are variations to this soup...add garlic, celery, green onion, turnips, sweet potatoes, butternut squash, zucchini, yellow squash....use your imagination! And watch your loved ones get and feel better! 

Red Wine Creamy Chicken

3-4 Boneless Chicken 1/2 Cup Red Wine 1 Cup Mayo 3 Tbls. Mrs. Dash 1/2 Cup Parmesan Cheese 1 lb. Asparagus, Fresh 1 Onion, sliced Brown chicken breasts in a skillet. Add onions then season, cheese, asparagus then add mayo/ wine mix. Bake in 325* oven until meat is 180* about 30 mins

Refrigerator Clean Out Soup (Vegetable Soup)

5 Green Onion, diced 2 Tbls. diced garlic 3 Tbls. olive oil 1 gt jar of home canned corn 1 qt. whole tomatoes 1 qt. chunked potatoes 1 qt. carrots 1 qt. beets 1 qt green beans 2 small bunches of broccoli, cut up bite size pieces 1/4 cabbage sliced thin 4 small peppers, yellow,red,orange, diced 2 tsp. cayenne 2 tsp. mrs. dash salt pepper mix add liquid to cover everything if you need too. Bring to a boil, then simmer for about 30 minutes or until cabbage and broccoli are soft.

Easy Bake Chicken Legs

5 lbs chicken legs, defrosted 1 gal. bag add to the bag, 2/3 cup flour, 1 tsp. black pepper, 1 tsp. paprika, 1 tsp. garlic powder, 1 tsp. salt, 1 tsp. parsley... seal bag and mix In two 13x9 pans...smear a cube of butter each pan......add two drums to the bag and coat then place in pan....repeat until pans are full. Bake 450* oven or grill ....turning every 15-20 minutes....for 1hr or until chicken reaches 180* internally Enjoy!

Baked Catfish

My mother in law was looking for a catfish recipe that was baked not fried. So I thought that I would come up with one. Through the many years of eating baked fish, we always went the simple route. Lemon, seasonings and butter. Simple and quick! Recipe: 4 catfish fillets, defrosted ( I stick mine in micro for about 4 mins from frozen stage) 1/2 cube of butter, sliced into 4 pieces 1/4 cup lemon juice...to your desired taste mrs. dash and mixed pepper Spread butter in the bottom of a 13x9 pan. Place fish on top of butter. Pour juice on top of fish then season. Bake at 350 for 20-30 mins until fish is flaky. No cover required! Delish!! Enjoy!

Corn Tortilla Casserole

Dozen corn tortillas 1 lb. shredded pork 3 cups shredded cheese or more if you prefer 1 can olives, sliced 1 can of mushroom soup 1- 16 oz salsa Roll stuffed corn tortillas with pork and cheese and place in bottom of greased pan until it is filled. Mix soup and salsa together. Pour over top of tortillas. Spread cheese over this. Spread olives over this. Bake 350* for 30 minutes

Quinoa Salad

I make this quite often. Alternative to orzo, rice, or couscous. 1/2 cup quinoa 1 cup water 1 tbls butter Bring to boil. then turn down to a simmer for 15 mins or until the seeds have popped to translucent. in separate bowl add diced garlic, sun dried tomatoes, black olives, diced green onions, sliced wee carrots, diced fresh tomatoes, couple splash red wine vinegar, couple splash olive oil, seasoning of your choice...me mrs. dash I cooked the above ingredients just a little....until the carrots al dente. stir it all together. Enjoy!!

Infused Porridge

1 3/4 cup water 1 cup quick oats honey 1 tbls. butter Bring water, 1 Tbls. Honey and butter to a boil. Then add oats and turn down to a simmer. Stir in oats until foaming quits (about  a minute) then simmer just until it feels like it is thickening a bit. Shut off and let sit for about 5 mins. If you want thick like spackle let sit for longer. Depending on your oats, they will be a little runny or thick. Honey infused porridge! Enjoy! I top mine with honey while Mtn man likes brown sugar!
