Mary's Hillbilly Coating

As some of you know, I create new recipes all the time. Sometimes good and once in awhile not so good! One word "yummy"! Recipe:  2 cups flax seed flour 1 cup cornmeal flour 1/4 cup mrs. dash 1/8 cup mixed pepper Throw in a gallon bag. Throw whatever it is you are trying to coat. Fry in hot hot shortening or corn oil! Viola! it is done!!

Easy Cheesecake With Blueberry Sauce

This is a bake and go kind of cheesecake! 1 (8oz) package of cream cheese, room temp 2 eggs 2tsp vanilla 1/2 cup sour cream 1/4 cup sugar (can substitute if you wish) Mix these ingredients together. I use a potato masher to mesh the cream cheese up. Then use a hand beater to finish. It is normal to see small pieces of cream cheese in your mix. they look like little lumps in your batter...A-ok! I used a ready made graham cracker crust( a small one will work)....pour the batter in it. Take another pan about the same width and depth as your pie pan and fill half with water. place in your oven to warm. once warm, place pie pan down in water. think double boiler method. keeps the crust from burning under your cream cheese. Bake for 30 mins in a 350 degree oven/grill. check with tooth pick.....if it comes out wet...give it 10 mins...if it comes out with a little bit of cake on it.....like crumbly type.....it is done. let cool completely! Basic Enchilades

Whole Chicken, cooked and  de-boned 4-6 Roma tomatoes, sliced and diced 1lb cheese, shredded 8 corn tortillas 1 can of beans, drained and rinsed 1 onion, sliced and diced 1 16 oz. salsa black olives, optional Cook onions in a bit of butter until translucent. add beans, chicken(i shred mine a little bit), and a couple tomatoes. Once warmed up, take a heaping spoon(ladel) full and add to tortilla then roll up. place in pan. repeat until pan is full. sprinkle layer of cheese. smother in salsa (pour over the top). add remainder of cheese. Cover all of this with remainder of tomatoes. Throw in oven (350*) for about 20-30 mins. or until cheese melts.

Fried Green Tomatoes

Loved the movie! Always wanted to try them and now I make every year! A southern delicacy much like frog legs at the buffet or fried bologna on a burger (an acquired taste)! When you pick your green tomatoes be sure they are firm. Squishy, mushy will only fall apart in the pan and create a huge mess for ya! Cornmeal mix: 1 cup cornmeal 1/2 cup Flour 1-2tsp salt & pepper 1 tsp garlic powder 1tsp onion powder add to a quart bag and shake real good. 8 green tomatoes, sliced about 1/4-3/8" Butter Shortening- about three cups Get your pan prepared...add shortening, and heat up until it is Hot Hot. How do you tell..take the corner of one of your battered tomatoes and dip in oil, if it bubbles you got Hot Hot!! Now while you waiting for your pan to get Hot Hot...prepare your sliced tomatoes. Take tomatoes and "sludge" them in your cornmeal mix. Flip, toss, sludge until good and covered. Set aside in clean dish being careful not to stack on top of one an

Lentil Salad

1 cup dried lentils 2 bay leaves 1 tbls diced garlic, jar or fresh 1 cinnamon stick(optional) 1/4 teaspoon sea salt (used during the cooking of the lentils) 1/4 cup extra virgin olive oil 1/4 cup red wine vinegar 3 tablespoons lemon juice 1/2 teaspoon ground cumin 1/2 teaspoon sea salt 1 medium red bell pepper, seeded and finely diced 1 large tomato, fresh and diced 1 small cucumber, diced 1/4 cup green olives, sliced 1/4 cup black olives, sliced 1/2 tsp liquid mint (optional) 3 tablespoons dried parsley optional add feta or goat cheese Rinse the lentils well and place in a saucepan with bay leaves, garlic, oregano and cinnamon stick. Cover with water or broth by 2 inches and a generous pinch of sea salt. Bring to a boil, reduce the heat to low, add the sea salt and simmer until the lentils are tender, 20-25 minutes. Drain. Tasty Clam Chowder

I haven't made Clam Chowder in awhile..... Temps have dropped to cooler days and nights, FINALLY! Always seems to draw the mood for good soup or chowder! Recipe: 1 large stock pot 6 slices bacon, cooked and diced 1 stick of butter 5-6 green onions, sliced 4-5 stalks celery, sliced handful of baby carrots, sliced 1 heaping tablespoon diced garlic 1 tsp mrs. dash 1 bay leaf 1/2 tsp. ground pepper 1-22 oz cream of mushroom 4- 6.5 oz. clams in juice, if not diced please do 2 qts. chicken broth 1 qt. water 1 cup flour Take stockpot add bacon slices, cook up.......when crispy, remove and drain on paper towels. The remainder of grease use to fry up green onions. Remove when cooked..drain on towel. remainder of bacon grease, add butter, add 1/2 cup flour to make a "rue". Add chicken stock, potatoes, celery, carrots, mushroom soup, garlic, seasonings, bay leaf, bacon, and onions. Bring to boil, cook until potatoes are soft. Turn off. Add clams with jui

Shrimp Orzo Salad

I love this pasta! So easy to make, almost no fail! 2 cups of Orzo, follow pkg instructions 15-20 cherry tomatoes, cut in quarters 2pcs bacon ,cooked 4 green onions, chopped 1/4 lb. shrimp, cooked, detailed I cooked the bacon, then added frozen shrimp to the pan. When they were almost done, added the green onions to cook a bit. In the meantime, I am boiling my water for Orzo. Add pasta to boiling water to cook. Strained, drained and added to a large bowl. Add tomatoes, cooked shrimp goodies. Added a dash of red wine vinegar, a bit of Mrs. Dash and pepper flakes. Let it rest for about 10 minutes. Enjoy! Ps. we are having butternut squash with this dish too!

Mary's Brown Rice Medley

2 cups Brown Rice 4 cups Water 1 Can Chicken,drained and flake with fork 1 Can Olives, sliced 1 Can Kidney Beans, drained & rinsed 1 cup Broccoli, chopped & cooked 1/8 Cup Extra Virgin Olive Oil 1/2 Cup Sun Dried Tomatoes in oil Salt/Pepper as needed This dish can be served Hot or Cold. Tip-- while rice is cooking prepare your other ingredients! Start with preparing your brown rice.....Add water, smidge of butter and rice to your pan to boil. Once it is boiling, turn the heat down to a simmer. Add your lid. Simmer until the water is gone. To check, take pan and tip sideways...do you see liquid? if so not ready yet. Time? oh about 15-20 mins or so total cook time.... When rice is done.....dump into a large bowl. Let the mixing begin. Add all above ingredients to your rice. Mix and Serve. Tip- if you want Cold...prepare a few hours ahead and cool in fridge! Enjoy!

Mediterranean Pizza

Thin crust: I used this crust recipe from http://allrecipes.com/recipe/257198/thin-crust-pizza-dough/ It is as follows: Ingredients 1 teaspoon active dry yeast 1/4 teaspoon white sugar 3/4 cup lukewarm water 2 cups all-purpose flour, divided 1/2 teaspoon salt Directions Dissolve yeast and sugar in hot water in a bowl. Let stand until yeast forms a creamy foam, 5 to 8 minutes. Mix 1 3/4 cup flour and salt in a large bowl. Pour in yeast mixture; mix well until dough comes together. Transfer dough to a floured surface and knead until smooth, adding remaining 1/4 cup flour if dough is too sticky, about 2 minutes. Roll dough into a 12-inch circle. Transfer to a greased pizza pan. ***I added flax seed flour in place of the usual cornmeal that one adds to the bottom of crust*** Toppings: I took whole home canned yellow cherry tomatoes,drained, cooked down until thick, spread on unbaked crust,cooked wild boar meat, onions, pepperoni, black olives, three diff

Breakfast Oatmeal

1 cup water 3/4 cup rolled oats Bring water to boil, add oatmeal bring to boil. Now I add a tsp of vanilla, a tsp of honey and about 1/2 cup of frozen fruit like berries. Boil until water is gone....or until you see the bottom of the pan. Serve and ENJOY!

Curry Chicken & Broccoli

If you are a lover of curry this dish is for you!!! When I make this dish it does not last long...one of those dishes that gets better the more it sits! Yum!! Recipe:  2 pounds of chicken( skinless, boneless) Fresh or Frozen Broccoli- 3 to 4 cups 2 cans of cream of soup (just the soup, no liquid) 1 cup of Mayo 2 Tbsp Curry Cook chicken through...you can cut or leave whole After cooked, lay in a 13x9 pan or a size to fit all your chicken( I used a small roaster pan in pic) , add frozen or fresh broccoli on top...should cover your chicken generously...... Separate Bowl mix cream soup, mayo and curry.....will be thick depending on how much mayo you get in mix. Spread this mix on top of broccoli Now you can top this dish with a little bread crumbs and/or parmesan Bake at 350 for 30 mins or until it is bubbly a little bit! Enjoy!!

White Trash Lasagna

I made this up today and it was a hit with hubby(3 helpings). Prep Before Layer: 1. Boil 1 whole chicken until falls off bone or Cook about 3-5 lbs of chicken then shred it 2. (1)Large container cottage cheese mixed with italian seasoning(3Tbls), 1/4 cup parmesan cheese and Tbls of garlic 3. Shred about 1/2 lb of cheese 4. blend up whole tomatoes (only if you need too...buy tomato sauce instead!) Layer In Order: 1.spread a few tablespoons of tomato sauce in the bottom of a 13x9 pan 2.lay 3 long noodles(uncooked) lengthwise 3.spread tomato sauce about 1/8" thick 4. spread cooked , shredded chicken on this layer 5. spread half of the cottage cheese mix 6. 3 lasagna noodles 7. tomato sauce 8. chicken 9. cottage cheese mix(the other half) 10. add shredded cheese 11.garnish with olives if ya have them 12. bake in 350-400 degree oven ....for approx. 30-45 mins or until you stick fork in it..goes through cooked noodles easily!(I baked mine on bbq grill) Pull out of
