Fresh Garden Stir-Fry

  FRESH GARDEN STIR FRY   Cut up your vegies in bite size pieces. If like meat (precooked) cut some up to add. In a large pan add a bit of oil and heat. Add all your vegies except tomatoes & meat cook until done through. Then add your meat and lastly your tomatoes until heated a bit. Serve on a bed of spaghetti/angel hair noodles.

Parmesan Squash

PARMESAN SQUASH   Slice squash into rounds or cut in half. Add oil to your pan and get hot then add your squash to cook until soft, stirring occasionally. Season with pepper & salt, stir, then add Parmesan ( grated Parmesan works best but imitation will do) to the top and cover to melt.

Spicy Meatloaf

SPICY MEATLOAF 2lbs raw burger 1/2 pint of salsa 1 cup of potato flakes 2 eggs Mix all ingredients together making sure to drain the liquid from the salsa ( I stuck a glass in the jar to push all the liquid out). Press in bread loaf to bake at 425* for 45-50 mins then add the other half of salsa and bake for another 10 mins or until meat reaches 170*

Mini Fruit Pies or Cookies

FRUIT PIE COOKIES OR MINI FRUIT PIES   Easy Crust Recipe (makes 2 pie crusts) 2 1/2 Cups Flour 2 Tbls sugar 1 Tsp. salt 1 Cup of Butter Crisco (Cold) 1/2 Cold Water( Icy) Mix the first three ingredients together then use a pastry blender to cut in Crisco until it looks like the flour is mixed in. Add the water then use hands to make it into a ball being careful to not mix to much. Split dough in two. Roll out one crust which should make you two pies by filling it in the middle of one side and folding the other side up and over. Bind it with the end of the knife pinching it together . Make an X in the top and brush with egg wash. Do this with all the crust for mini pies. Bake at 350* for 20 mins For cookies-Roll out both crusts individually. Spread fruit in the middle of the bottom then lay the top on. Use a round glass or cookie cutter to make the cookie round. Pinch the sides by using a knife end or your fingers to join the crusts together. Make the X

30 Minute Rolls

30 MINUTE ROLLS   1 C plus 2 Tbsp Warm Water 1/3 C Oil 2 Tbsp Yeast 1/4 C Sugar mix above ingredients together  let rest for 15 mins Add these next ingredients to above 1 1/2 tsp salt 1 egg 3 1/2 C Flour Form dough into 12 rolls Place in greased 9x13 pan Let rest for 10 mins Bake for 10-15 mins  Found these over at Bacon And Eggs ...... White Chili

WHITE CHILI   1 Tbls Oil or Bacon Grease 1 lb. Chicken, cut into bite size pieces 1 Med Onion,, chopped 1 1/2 tbls Garlic, diced Saute Chicken, Onion and Garlic 1 Can or 2 C. Chicken Broth  1 Pint or 2 C Salsa Add Beans, Broth & Salsa Bring to a boil, reduce heat & simmer uncovered 30 mins. If you don't have canned beans use dry beans in quick method. Quick Method as follows: 1 C of Beans to 3 C Water bring to a boil for 10 mins turn off let set for 1 hour or until beans are soft. If salsa doesn't work for you then add these ingredients instead : 2 C Green Chilies 1 tsp Salt 1 tsp Cumin 1 tsp Oregano 1/2 tsp Pepper 1/4 tsp Cayenne Pepper  Modified from http://www.tasteofhome.com/recipes/creamy-white-chili

Monkey Bread From Frozen Rolls

MONKEY BREAD W/FROZEN ROLLS   When I put this in oven I put just a little water in glass for breakage then when I took it out I removed the glass before inverting on plate 12 Rolls 2/3 C Brown Sugar 2 tsp Cinnamon 1/4 C Butter, Melted 1/2 C Pecans  Thaw rolls until soft (1 hr room temp), cut each roll in half Mix brown sugar, cinnamon & nuts Dip roll halves in butter then roll in cinn/sugar mix until coated Arrange in bundt pan or a 9-10" pan with small glass in the middle Cover w/sprayed plastic wrap Let rise until double in size (2-3 hrs) Remove Wrap Bake 350* for 20 mins Cover with foil for another 15 mins Immediately remove from oven Carefully release edges Invert onto a serving plate Modified from Rhodes Bread

Pork & Beans Casserole

PORK & BEANS CASSEROLE 2 Large Boneless Pork Steaks Green Bean Casserole   32 oz/1 qt small potatoes or chunks-if canned drain liquid off Bake Pork Steaks for 20 mins by themselves. Add drained potatoes then add green bean casserole. Bake this casserole at 425* for 50-60 mins until meat is cooked through

Whipped Jello Salad

WHIPPED JELLO SALAD   Raspberry jello, peaches and pecans In  Mtn Man's family this is a traditional dish served anytime of the year. They call it "Pink Stuff or Orange Stuff or Green Stuff" depending on what flavor of jello is used.  Recipe: 1 small box of jello-any flavor 1 small (8oz) cottage cheese 1 small (80z) cool whip Mix the jello powder in the cottage cheese then add the cool whip and mix. Simple!! Be sure to let cool in the fridge for about 30 mins until firm. Alternatives: Add chopped fruit or mixed fruit Add handful of nuts Add handful of coconuts Add maraschino cherries Spiced Crab-Apples on top-Thanks to my Auntie Reen

Drop Biscuits

DROP BISCUITS   Combine 2 C Flour, 1 Tbls Sugar, 3 Tsp Baking Powder, 1 Tsp Salt. Cut in 1/2 C Shortening then add 1 C Milk and 1 egg. Mix Well. This mix will be thick but a little on the runny side. By the spoonfuls drop dough on a 9x13 greased pan Bake 450* for 15-17 mins.....

Traditional Beef Roast

TRADITIONAL BEEF ROAST     In a large oven proof pot add a couple tbls of oil/bacon grease to brown the meat on all sides. Remove the meat from the pan and add one large cut up onion, 2 Tbls of diced garlic, 2 large pinches of herb seasoning. and 1 tsp of pepper. At this point, if you have fresh potatoes(cut up) and carrots (cut up) add now along with 6 cups of water with 3 cubes/3 tsp. of bouillon, depending on the size of your roast, ours was small. If you have canned goods , open jars, drain and add to the water. Add the meat too!  Put the whole pot in a 350* oven for an hour or until your roast is done....

Best In The West Berry Cobbler

BEST IN THE WEST BERRY COBBLER   I found this recipe on food.com .  Spread 2-3 C Berries in a greased 8" pan. Cream together 3/4 C Sugar and 3 Tbls Shortening. In separate bowl add 1 C Flour, 1 Tsp Baking Powder, 1/4 Tsp Salt and mix. Add to the creamed sugar alternating milk(1/2 C) and Flour mix well. Batter will be thick. Spread over the berries. Now combine 1 Tbls Cornstarch and 1/2 C Sugar. Spread this mix over the batter- Do Not Mix. Pour 1 C of boiling water over this- Do Not Mix! Bake in 350* 30-45 mins Double this in a 9x13 pan bake for 20-30 mins longer

Fried Green Beans

FRIED GREEN BEANS   Here in the south this is a common dish.... Bacon grease in your pan is required(at least in this house) a mess of green beans(fresh works best) let them cook a bit then drain on paper towels... these are so good!!

Oven Baked Lasagna

OVEN BAKED LASAGNA   In a fry pan add a touch of oil/grease, add ground burger (1lb), 1 onion, chopped, 2 Tbls diced garlic cook thoroughly add couple good pinches of mix italian herb seasoning(parsley, thyme, oregano, basil, etc) then add 32oz of tomato sauce( pasta sauce will work too). Simmer about 5 mins.... In a bowl mix 2 cups of mozzarella cheese and 12 oz cottage cheese and 1 egg(not a big deal if out of eggs be brave go without) mix together.... I found that the cheeses have plenty of salt no need to add extra...but you may want to add some pepper (1 tsp) here.   In the bottom of a 9x13 pan you are gonna layer these items...... 1/2 of meat sauce first then put about 4 noodles wide(long ways) add cheese mix then meat, noodles, cheese mix. Here you add another 2 cups of mozzarella cheese and garnish however you like. As you see I used fresh tomatoes. Bake in 350* oven for 45 mins covered then take cover off and bake another 10 mins. Burger Stew

BURGER STEW Some may call this soup, it isn't thick by no means but it is filling! There is a lot of goodies.... In a large pot fry up some burger with onions, green peppers, a couple TBLs of garlic. Cook until burger is done...now add either canned potatoes or fresh chopped potatoes, green beans or corn, and canned tomatoes.I added a tomato juice for my liquid but you can just add water instead. Depending on family size start with 1lb of burger for 2-3 up to 3lbs for 10+ people. This is a great dish to experiment with.....add different vegies to the potatoes and meat. Be sure to test taste for salt and seasonings.....This is a really tasty soup and fills a person up! Makes a great leftover too! Add rolls for your side dish.....
