Venison Stew

I have shared a lot of stew recipes such as: Burger Stew ,  Pork Stew . I usually get asked how to make something with Venison. One of my stand bys is Venison Stew in the crock pot or the cast iron bean pot on the wood stove.  Recipe: Add to the crock or stew pot 1 lb. Venison Cubes, fresh or frozen, uncooked and 1 large onion 2 qts of canned potatoes-this is what I have in my pantry but you can use canned from the store or fresh(add to crock and cook until soft) 1 cup of corn, frozen, fresh, canned 1 qt. tomato/okra mix (optional) OR 1 qt green beans OR  1 qt tomato sauce 2 tbls of Montreal Steak Seasoning 3/4-1 qt water-add enough to finish filling the pot  Turn crock on high and cook for about 3-4 hrs..or longer if the meat is tough. ***Idea....put together the night before and turn on before leaving for work then come home for lunch to turn it off or down to low should still be warm upon your return in the evening.Note you could just leave on lo

 I tried the recipe from  Ozark Mountain Family Homestead  and first off this recipe is really easy to say the least. Very Very Tasty!! Salty & Sweet, Buttery & Chocolatey.... I did do a couple things different in that I split the recipe in half as I had a smaller oven and pan. I used crushed peanuts as a topper. Oh and caution on the butter/brown sugar mix..DO NOT LEAVE IT ALONE. Constantly stirring is required and a timer!!! Jus sayin'! Once you get things right this recipe take no time at all to make...I think the longest part was the cooling process which I used my fridge for that.   It can be made as Peppermint, Chocolate, Toffee, Cherry, or whatever type of baking chips you prefer.  It’s best to use a cookie sheet with shallow sides and then line the bottom of it with saltine crackers.   In a saucepan, combine 1 cup butter and 1 cup dark brown sugar.   Bring it to a boil and boil for 3 minutes.   Immediately pour it over your crackers and spread it

Creamy Potato Soup

Recipe: 1 lb bacon, 2 large onions, 2 qts of potatoes, 1/2 can evap milk, 1 cube butter, 5-6 carrots, celery(optional), flour, salt & pepper Crockpot or Stew pot Out of my family cook book Boil carrots & potatoes(only if using raw) do not drain   Fry up bacon then chop Cook up chopped onion in bacon grease Add vegies to the crock, draining off the onion from bacon grease Add bacon Melt butter for Rue(thickener) gradually add flour until thick over low heat do not burn! Add Rue, 1/2 can milk and add water until full to the top. Add salt & pepper and stir!   Cook in crockpot for 3-4 hrs it will thicken as it cooks so stir occasionally. If you decide to cook in stew pot keep a eye on it so it won't stick to bottom of pan. Med heat until it boils then simmer for about 45 mins stirring occasionally.

Turkey Cake

I was asked to make this a few years ago to see if it was possible. I had fun making it but in reality don't think it is practical for everybody. It is good only if you like all your food together in one slice. LOL! We weren't to crazy about the marshmallows but maybe if I had toned them down a bit(had the top stuffed with them) it would have been better. Otherwise, it really wasn't any different then a plate full of food all mixed together. I am sorry can't find my pic of my version which turned into a square cake. Lost when computer died! Venison Roast

Comfort Food All The Way! I started with a frozen back strap laid in the bottom of a small roaster pan with oil in the bottom of it. I added some Montreal (steak) Seasoning to the top of it. I  added cut up carrots, onions and potatoes around the sides and top of the roast adding more Montreal Seasoning. Adding to the mix about 2-3 Cups of cranberry wine (my home brew). Bake in a 400* oven for 2 hrs.......Yummy! The meat is very moist and falls apart...... Really could do this with any type of meat (small roast)

The Best Pork Chops

4-1" thick pork chops ( as you can see mine were little thin, 12 is what I used) 2-4 large eggs(depending on how many chops) salt/pepper( montreal seasoning works too) onion powder garlic powder italian seasoning or herb seasoning 1 C. of seasoned bread crumbs 1 C of parmesan in a can Beat 2 eggs together in a bowl In another bowl mix the remainder ingredients together Dip pork chops in eggs then place in bowl of bread crumb mix make sure all is covered with breading mix Place in a greased pan(use pam spray if handy) When you are finished with this process place the pan or pans in a 400* oven for 15 mins then carefully flip chops and cook for another 15-30 mins or until done (golden brown) These turned out really moist!!! Spicy Chicken, Beef or Pork

This recipe calls for meat...but I would suppose you could use Tofu or just plain vegies with a little adjustment to the soy sauce. This was very tasty!! Recipe: 1 lb. Meat-sliced into strips 1 large onion cut into strips or chopped 1 large green pepper, chopped (optional) couple small carrots or 1 large carrot, sliced or chopped oil In a pan or wok(chinese cooking pan) add oil. When oil is hot add meat and onions...cook until done then add pepper, carrots cook until a bit soft. Let simmer while you make your soy mix In a bowl mix these ingredients together. 1/4 C Soy sauce 1/2 C Water 2 Tsp red chili flakes 2 tsp Cornstarch Add this mix to your meat mix.then add about a dozen snow peas..simmer until this gets a bit thick then remove from heat. Serve on bed of rice!  

Fresh Garden Stir-Fry

  FRESH GARDEN STIR FRY   Cut up your vegies in bite size pieces. If like meat (precooked) cut some up to add. In a large pan add a bit of oil and heat. Add all your vegies except tomatoes & meat cook until done through. Then add your meat and lastly your tomatoes until heated a bit. Serve on a bed of spaghetti/angel hair noodles.

Parmesan Squash

PARMESAN SQUASH   Slice squash into rounds or cut in half. Add oil to your pan and get hot then add your squash to cook until soft, stirring occasionally. Season with pepper & salt, stir, then add Parmesan ( grated Parmesan works best but imitation will do) to the top and cover to melt.

Spicy Meatloaf

SPICY MEATLOAF 2lbs raw burger 1/2 pint of salsa 1 cup of potato flakes 2 eggs Mix all ingredients together making sure to drain the liquid from the salsa ( I stuck a glass in the jar to push all the liquid out). Press in bread loaf to bake at 425* for 45-50 mins then add the other half of salsa and bake for another 10 mins or until meat reaches 170*

Mini Fruit Pies or Cookies

FRUIT PIE COOKIES OR MINI FRUIT PIES   Easy Crust Recipe (makes 2 pie crusts) 2 1/2 Cups Flour 2 Tbls sugar 1 Tsp. salt 1 Cup of Butter Crisco (Cold) 1/2 Cold Water( Icy) Mix the first three ingredients together then use a pastry blender to cut in Crisco until it looks like the flour is mixed in. Add the water then use hands to make it into a ball being careful to not mix to much. Split dough in two. Roll out one crust which should make you two pies by filling it in the middle of one side and folding the other side up and over. Bind it with the end of the knife pinching it together . Make an X in the top and brush with egg wash. Do this with all the crust for mini pies. Bake at 350* for 20 mins For cookies-Roll out both crusts individually. Spread fruit in the middle of the bottom then lay the top on. Use a round glass or cookie cutter to make the cookie round. Pinch the sides by using a knife end or your fingers to join the crusts together. Make the X

30 Minute Rolls

30 MINUTE ROLLS   1 C plus 2 Tbsp Warm Water 1/3 C Oil 2 Tbsp Yeast 1/4 C Sugar mix above ingredients together  let rest for 15 mins Add these next ingredients to above 1 1/2 tsp salt 1 egg 3 1/2 C Flour Form dough into 12 rolls Place in greased 9x13 pan Let rest for 10 mins Bake for 10-15 mins  Found these over at Bacon And Eggs ...... White Chili

WHITE CHILI   1 Tbls Oil or Bacon Grease 1 lb. Chicken, cut into bite size pieces 1 Med Onion,, chopped 1 1/2 tbls Garlic, diced Saute Chicken, Onion and Garlic 1 Can or 2 C. Chicken Broth  1 Pint or 2 C Salsa Add Beans, Broth & Salsa Bring to a boil, reduce heat & simmer uncovered 30 mins. If you don't have canned beans use dry beans in quick method. Quick Method as follows: 1 C of Beans to 3 C Water bring to a boil for 10 mins turn off let set for 1 hour or until beans are soft. If salsa doesn't work for you then add these ingredients instead : 2 C Green Chilies 1 tsp Salt 1 tsp Cumin 1 tsp Oregano 1/2 tsp Pepper 1/4 tsp Cayenne Pepper  Modified from http://www.tasteofhome.com/recipes/creamy-white-chili

Corn Fritters

CORN FRITTERS   1 C Oil 1 C Flour 1 tsp baking powder 1 tsp salt  2 eggs, whisked 1 can whole corn (drained, saving 1/4 c. liquid) Mix Flour, BP, Salt, & Corn. Add Eggs & Corn Juice Drop By Spoonfuls in Hot Oil Based on Sci Fi Chicks Corn Oysters   Ps She suggests using Apples instead of Corn
